    Baking for Dummies...

    I suppose this topic could also cover "cooking" for dummies!

    Growing up my mother didn't bake a lot, so I really don't know what the heck I'm doing in that department. But, every now and then I get the urge to bake (and hopefully not incinerate) something half edible.

    Here is an amazingly easy and yummy recipe I found for Peanut Butter Cookies. I posted it in another thread, but because it's SOOOOOOOO EASY I thought we could actually start a new "for Dummies" topic for the baking-chellenged like me.

    Super Easy Peanut Butter Cookies! - makes about 1.5 dozen cookies.

    1 egg

    1/2 c. brown sugar

    1/2 c. peanut butter

    Optional: I also added 1/4 c. chocolate chips and 1/4 c. walnuts, chopped (or in my case pounded with a hammer).

    Mix ingredients, roll into small balls and press the top of each cookie with a fork (a la peanut butter cookie style!). Bake at 350 for approx. 10 minutes.

    Note: I used a baking stone and they took about 12 minutes in my oven. The texture is closer to fudge than cookie. I turned the heat up to 375 with the second (frozen) batch and they cooked up perfectly.

    I doubled the recipe when made it = a yield of approx. 3 dozen cookies. I made one dozen with the first batch then rolled the remaining dough into two dough tubes, wrapped them in saran, and popped them in the freezer for later use. When I took the first frozen tube out for batch two it sliced up very nicely. I put the frozen dough slices on the cookie sheet and pressed the tops with a fork after they were in the oven for a few minutes.

    If you have a PB craving and want something rich and peanutty, they are perfect. Thanks for the vote of confidence andi, but I really am a rank beginner in the mixing bowl department. Learning though...

    Ok, So what do you want to know about baking?  I' love to bake.

    give me an idea of what you wnat and I can dig out recipes when I get back from philly

    I'd like to have 2 or 3 great recipes for no-fail squares that are delicious - the kind you can whip up for parties and occasions with minimal fuss, the kind with layers delicious stuff in them.

    geesh...my profs and ass thank you...now that I've read that recipe I must make it before I do anything else!!

     I was contemplating a run to coldstone to satisfy my peanut butter craving now I can stay in from the thunderstorm and bake!

    and it looks so easy...thanks for sharing.

    TinaCap: Here is a recipe that I make that my husband requests all the time. It may seem long but it is easy and yummy!

    Chippy Chewy Bars

    1/2 cup butter or margarine

    1&1/2 cups graham wafer crumbs

    1&2/3 cups (10oz.pkg) peanut butter chips

    1&1/2 cups flaked coconut

    1 can (14oz) sweetened condensed milk

    1 cup semi-sweet chocolate chips

    1&1/2 teaspoons shortening (DO NOT use butter,margarine or oil)

    Heat oven to 350F.Place butter in a 9x13 pan. heat in oven until melted;remove pan from oven.Sprinkle graham crumbs evenly over butter and press down with fork.Layer 1 cup peanut butter chips over crumbs;sprinkle coconut over peanut butter chips.Layer remaining 2/3 cup peanut butter chips over coconut;drizzle condensed milk evenly over top.Bake 20 minutes or until lightly browned. Remove from oven.

    In a small microwave safe bowl, place chcolate chips and shortening. microwave on HIGH (100%) 1 minute;stir.If nencessary, microwave on HIGH an additional 15 seconds at a time, stirring after each heating, just until chips are just melted and mixture is smooth. Drizzle evenly over top of baked  mixture. Cool completely in pan on wire rack. Cuts into about 48 bars.

    That's what I'm talking about!

    I have never bought shortening in my life, believe it or not, but 1.5 teaspoons of it, I can handle. I'm supposed to bring a dessert or appetizer to Sharon's next week. I said I would probably bring an appetizer, but I think I will bring this dessert instead.

    Tina, I haven't forgotten about your request, I just forgot where I put the book i have easy and tasty recipes in. I am looking for it tho' sorry.
