    Re: Christmas Cookies?

This obviously isn't a cookie, but this seemed the best place for it.

Easy Peasy bite size "traditional" Christmas puddings.

Take a generic store bought dark fruit cake (the one I use is 700g and costs Au$2.99)

crumble it up in a bowl, pour over about a half cup brandy and mix it gently through the cake crumble. press down, cover and allow to sit for several hours (or overnight).  Take spoonfuls of the mixture and roll it into small bite size balls.

Melt white chocolate and spoon a teaspoon full over each ball to resemble dribbling custard.  decorate tops by either piping red icing dots with green icing splodges to resemble holly or adding small chips of red candy with a chip of green either side for leaves before chocolate sets. Refrigerate.

These are surprisingly yummy and in the bite size really do taste like old fashioned traditional Christmas plum pudding. Because they are NOT cooked the alcohol content remains so NOT for those who wish to completely avoid alcohol consumption!

    Re: Christmas Cookies?

Here's some super light and fluffy cookies that I made for my cookie exchange. There actually easier then they sound.

    2 1/2 (1 ounce) squares unsweetened chocolate

    1/2 cup butter

    2 cups all-purpose flour

    1/2 teaspoon baking soda

    1 teaspoon baking powder

    1/4 teaspoon salt

    1 1/4 cups white sugar

    2 eggs

    1 teaspoon vanilla extract

    2/3 cup sour cream

    2 cups semisweet chocolate chips

Melt chocolate squares and butter in the microwave, it takes about 1.5 minutes, stir once at 1 minute.

In a small bowl sift together flour, baking soda and powder, and salt.

In a large bowl, stir together sugar, eggs, and vanilla. Mix in the chocolate mixture.

Add sour cream and dry ingredients and stir until well mixed. Add chocolate chips.

Drop by the spoonful on to ungreased cookie sheets.

Bake at 375°F for 10 minutes

Let cool for 5 minutes on cookies sheet, then remove to wire rack.

Keep in an air tight container so they stay soft.

    Makes 2.5 dozen

    Re: Christmas Cookies?

I'll move mine over here too!

Mmmmm cookies! I love cookies. Smile

There are two traditional cookies in my family. One is just a cut-out cookie recipie, but it is the best recipe for them that I have ever eaten. A lot of the time cut-out cookies are just too dry or flowery, but these are perfect. One of my mother's childhood freind's Mother made the original cookies, so we name them after her.

    Mrs. Mill's cut-out cookies

    1 cup butter

    2 cups sugar

    3 eggs

    2 Tablespoons milk

    4 cups flour

1 1/2 tsp cream of tartar

    1 1/2 tsp baking soda

    1 tsp vanilla

    1/4 tsp salt

    - Cream the butter , add the sugar, then the eggs, then the milk and vanilla. Sift the dry ingredients together, then mix in the dry ingredients to the rest a little at a time so the flour doesn't fly everywhere (I'm telling you this from experience as a small child Smile) Chill in the refrigerator for a few hours or overnight, then roll it out on a counter over a little flour, cut in the shapes you want and put them on a greased cookie sheet. Bake at 350 degrees Fahrenheit for 5-7 minutes. Enjoy!
