My in-laws used to do this giant pressed sandwich thing. They used a whole round loaf - think cibatta or pumpernickel - and put all kinds of veggies in it. They'd grow the veggies themselves so it would be the assortment that was ripe at the same time. I know it had peppers and eggplant, but all kinds of other things too. Then they'd put it in the fridge and put a 10lb freeweight on it and leave it for a day. The thing was enourmous and had to be squished to eat it. It was fantastic.
