My mom always used an electric stove, and I have a gas one. It is fantastic for roasting meats, and usually cooks them much more quickly.
For baking, I usually find that for things like quickbreads and pies that I have to leave them in a little longer. Cookies I think take slightly less time. I would go less by recipe and more by just looking at them. I also have heard that the type of container you keep your cookies in affects whether they stay crispy or chewy. If I remember correctly a metal container keeps them crispy and a plastic one keeps them chewy.
I love the pumpkin bread myself - will have to make some soon and freeze for the church's Christmas bazaar.
