Hello everyone! Well I am starting my Christmas baking this weekend and I am looking for some new ideas for cookies.....getting tired of the same old stuff! does anyone have a good recipe for some buttery, melt in your mouth shortbread? Or any other yummy cookie for that matter? Looking forward to seeing some great ideas! thanks in advance!

My Mother in Law makes some killer whipped shortbread cookies that just litterally dissolve away in your mouth. I'll try to get the recipe for you! Otherwise, I can't be of much help, my christmas baking up to now has been a trip to the nearest loblaws affiliate to pick up a box of PC christmas cookies. (thats President's Choice, the store brand name, not politically correct) But now that I'm a domestic Goddess, maybe the kiddies and I will whip some up in the kitchen this year! I'll be watching this thread with interest! Also, your local library can be a treasure trove: Almost every women's magazine has a holiday baking issue-Canadian Living, Country Living, Martha Stewart, Chatelaine, Better Homes and Garden's, Family Circle: The library will usually make back issues available to check out, and the most recent ones will be there for use in library, you can photocopy the recipes that interest you.

Whipped Shortbread (is it Christmas yet!) This is one of the easiest and mouthwatering recipes that I have found. 1 cup butter 1 1/2 cup flour 1/2 cup icing sugar That is it! Put all in a bowl, beat for 10 mins. Bake 350 for approx 17 min. Should make 3 doz. You can use either a cookie press or just drop by tsp. I usually keep them on the smaller size so you can pop a whole one in your mouth. Try and bite them...they crumble and fall. Make sure your butter is room temp and I usually add the flour and icing sugar in stages. Also watch with baking, you just want the edges to be slightly golden. I have also added sprinkles, candied fruit (yes some people like this ), gumdrops, choc etc. Have fun, if I can think of more, I will post later. Cheers, Janice

Your very welcome. Hope they work out for you. I haven't had a chance to start baking yet, but I have a couple of other standards that I make at Christmas. Belgium Cookies, Mexican wedding cakes (also very easy, and melt in your mouth), Naniamo Bars, Macaroons, Eagle brand squares and I always try to find one different/unusual one. I guess I better get at it, the time seems to be flying by. If you are interested in any of the above, PM me and I will post them also. Cheers, Janice

Snikerdoodles fromthe 1961 betty crocker book. Mix Throughly... 1 cup soft shortening ( part butter) 1 1/2 cups sugar 2 eggs Sift together and stir in... 2 3/4 cups sifted Gold Medal flour 2 tsp cream of tartar 1tsp soda 1/4 salt Roll into balls the size of small walnuts. Roll in mixture of 2 tbsp. sugar and 2 tsp cinnamon. Place 2" apart on ungreased baking sheet. Bake until lightly browned ...but still soft. ( these cookies puff up at first....then flatten out.) Temp 400F ( mod hot oven) Time: Bake 8 to 10 min Amount about 5 doz. 2" cookies.

Hmmm, my MIL's snickerdoodle is a bar type thing. Oh, and then there's her Yum Yum bars! Not a christmas thing, tho they're always present at christmas, and I don't think Yum Yum bars is what they're actually called, but that's what My husband's family calls them. I'll see what I can do about finding the recipe.

Janice, the shortbreads turned out amazing!!! They are so light and tender and just disintegrate when you put them in your mouth! (yes we had a few right away ). I topped mine with a little piece of candied ginger & some with candy cane pieces. Thanks again for the yummy recipe!
