Go ahead and start a Vegetarian Main Dishes thread!  I think that, since you started the thread, you can go up and edit the Subject line and we can just go from there.

    Re: Vegetarian Dishes

I'll start with one of my house's favorites! Massaged Kale salad. It's an excellent detox salad. My recipes are never exact so just make enough to feed everyone!

    You will need:

    a bunch of Kale

    a bit of veggie oil

    an orange or grapefruit (sectioned)

1 hard boiled egg per person

    Honey

    Mustard

    You will do:

Cut off the stalk of the kale and lay the leaves on top of one another and roll them up. Then into cut 1/2 inch strips.  Toss into a salad bowl and add a little bit of veggie oil. Massage until the kale turns dark green. (You're bruising the leaves to get rid of the rubbery texture of the kale)

When that's done cut the egg and orange into bite sized bits and mix into the salad.

Next, the dressing. Put equal amounts honey and mustard into a bowl. Add veggie oil and blend until you get a good dressing consistancy, adding more honey or mustard till it tastes right (this is what i ment by not exact)

Add dressing to the salad and enjoy!

Hope this gets the thread started!

    Peace, Love, and GBS,

    Loula

    Re: Vegetarian Dishes

I was going to suggest that the kale must feel really good being massaged and all...but then you said you were bruising it. I'd hate to be the kale thinking you were going in for a massgae and then getting beaten up! LOL! Sounds delish.

    Re: Vegetarian Dishes

I suppose it still beats getting immersed in steam and then doused with garlic sauce, though, which is my favored approach to kale.  (mayo or fake mayo/lemon juice/crushed garlic/salt/pepper, all to taste)

Sounds delish ladies! So what do you do with beets? I have a bunch in the crisper but don't know what to do with them...

    Peace, Love, and GBS,

Lots of good recipes on the Vegetarian Society webpage Smile

I like Risotto and Spag bol best.

I use Quorn foods quite a lot, or Tofu to cook with. How about everyone else?

    Re: Vegetarian Dishes

I'm a vegetarian, and I love to cook, but living in a dorm makes it hard to cook for myself very often. The Kitchens are terrible. Luckily, my school makes it fairly easy for me to find really good vegetarian options in the dining halls and the tons of other places to eat on campus. I've never really cooked with Tofu. I don't really know how. I'd like to try it though. Smiles

    Re: Vegetarian Dishes

If you slice beets really thin with a mandolin (the kind you slice with, not play music on) and coat them with oil, you can bake them and make them into beet chips.

Preheat oven to 400.  Oil a baking sheet and preheat it in the oven for 5 minutes.  Place beets on the sheet and lightly spray with oil.  Bake 10-12 minutes turning halfway.  Transfer to paper towels and sprinkle with sea salt.

This works with parsnips, sweet potatoes, carrots, kale, spinach, etc.  It's a good way to get veggie haters (ie your kids) to eat a veggie because people will eat anything that is salty and crunchy.  You just have to watch them carefully while baking because one minute they are just right, and the next minute they are charcoal.

    Enjoy!

I have no idea...  we usually devour them within a day or two of making them.

Now that sounds like a "mandolin" I could play!  Is that what they're usually called?  Can you post a link to a picture of one?  I think I want one of those.
