I'll start with one of my house's favorites! Massaged Kale salad. It's an excellent detox salad. My recipes are never exact so just make enough to feed everyone!
You will need: a bunch of Kale a bit of veggie oil an orange or grapefruit (sectioned) 1 hard boiled egg per person Honey Mustard You will do: Cut off the stalk of the kale and lay the leaves on top of one another and roll them up. Then into cut 1/2 inch strips. Toss into a salad bowl and add a little bit of veggie oil. Massage until the kale turns dark green. (You're bruising the leaves to get rid of the rubbery texture of the kale)
When that's done cut the egg and orange into bite sized bits and mix into the salad. Next, the dressing. Put equal amounts honey and mustard into a bowl. Add veggie oil and blend until you get a good dressing consistancy, adding more honey or mustard till it tastes right (this is what i ment by not exact) Add dressing to the salad and enjoy! I was going to suggest that the kale must feel really good being massaged and all...but then you said you were bruising it. I'd hate to be the kale thinking you were going in for a massgae and then getting beaten up! LOL! Sounds delish. Anne

I'm a vegetarian, and I love to cook, but living in a dorm makes it hard to cook for myself very often. The Kitchens are terrible. Luckily, my school makes it fairly easy for me to find really good vegetarian options in the dining halls and the tons of other places to eat on campus. I've never really cooked with Tofu. I don't really know how. I'd like to try it though.

If you slice beets really thin with a mandolin (the kind you slice with, not play music on) and coat them with oil, you can bake them and make them into beet chips. Preheat oven to 400. Oil a baking sheet and preheat it in the oven for 5 minutes. Place beets on the sheet and lightly spray with oil. Bake 10-12 minutes turning halfway. Transfer to paper towels and sprinkle with sea salt. This works with parsnips, sweet potatoes, carrots, kale, spinach, etc. It's a good way to get veggie haters (ie your kids) to eat a veggie because people will eat anything that is salty and crunchy. You just have to watch them carefully while baking because one minute they are just right, and the next minute they are charcoal. Enjoy!
